This no bake energy ball recipe is filled with lemon (a favorite flavor of mine), chia seeds, dates, and hearty oats. Everyone needs a great snack to just pick up and eat. And in my opinion, everyone needs a nice sweet one! The dates give this recipe a good amount of sweet without any refined sugar. Just energy and tasty lemon flavor in this 5 minute recipe. Lemon energy balls are so great for on the go, kids (they always want a snack right as your leaving the house right?), at work right around 3pm (snore), after a workout... etc. Whip up a batch and try not to eat them all in one sitting.

Medjool Dates vs. Regular Dates

A lot of people have this question when they make anything with dates. Should you use Medjool dates or just regular dates, and what is the difference?

There actually is a difference between the two. Medjool dates are a fresh fruit and are found in the produce section of the store (I get mine at Aldi's- love that store). Medjool dates have a rich and caramel like flavor and are soft and easy to use in recipes like this no bake energy balls recipe.

Regular dates, "Deglet Noor" dates, have a more firm flesh. They are picked dry, hydrated, and then sold in the grocery section at the store. Still a great thing to add to your diet, but I prefer Medjool dates for this recipe for the flavor and texture.

Health Benefits of Dates

There are quite a lot of health benefits in eating dates.

  • High in Fiber, slows the digestion and can lower the possibility of sugar levels spiking after eating.
  • Helps to keep you from getting constipated.
  • A great alternative to refine sugar. Dates have a low glycemic impact and can help manage blood sugar levels.
  • Dates contain a brain booster- choline. This is a B vitamin that helps with better memory and learning.
  • Helps to maintain bone mass.
  • Loaded with antioxidants.
  • And finally (probably didn't even get them all in here), they can really help with labor. That's right, like birthing a human being out of your body ladies! (note: it may not put you in labor, but eating them leading up to labor has a lot of benefits) You can find more on this gem over at One Strong Mama. I used them for my second labor and delivery (wish I had with my first) and let's just say it was a 42 hour labor, 1 hour of pushing, no epidural, back labor, and my son came out 9lbs 7.5oz. Huge freaking baby (worth it!) especially considering I am like 5'4" and like 120lbs normally. And because of the information and healthy pregnancy I had working with One Strong Mama- it was an amazingly good experience. Not one tear. HOW?! I swear they are magical birthing goddesses.

How do you make no bake energy balls?

This no bake energy balls recipe is filled with lemon and oats. They taste like lemonade in a bite sized edible portion. Awesome!

Using a food processor or something like a Vitamix or NutriBullet, blend your dates (pitted) and the juice form one lemon. This will form a kind of paste. Add in your rolled oats and chia seeds and blend until it's fully combined.

So easy! Now just take around a tablespoon amount (a cookie scooper works well too) and roll into a ball using your hands.

Note: if you don't like full chunks of rolled oats in your bites, simple blend them into more of a powder before hand and add them in like that.

You should also note, depending on what you are using to blend, you may need to scrape down the sides and work the dates into a blended smooth paste a couple of times.

Other than that, this no bake, 5 minute, lemon and oat energy balls recipe is so yummy and will keep in the fridge in an air tight container for 1-2 weeks. Enjoy!

Ingredients

  • 10 Medjool Dates (pitted)
  • 1 Lemon
  • 2 tablespoon Chia Seeds
  • 1 cup Rolled Oats

Instructions

  1. In a food processor, Vitamix, or NutriBullet, blend your pitted dates (don't forget to take the pits out) and the juice from your one lemon.
  2. Blend until smooth like paste- may need to scrape the sides down a couple times to get everything incorporated.
  3. Add your oats and chia seeds and blend until fully mixed in.
  4. Take about a tablespoon amount into your hands and form into a ball.
  5. Keep these lemon oat energy balls in the fridge in an air tight container for up to 2 weeks. Enjoy!
